Shrimp Toast

Welcome back!  Today, we have an interesting dish hailing from Hong Kong: Shrimp Toast! We know, it sounds a little strange, but it is quite delicious and a great addition to a dim sum meal or just as an appetizer. The idea actually originated as a sort of fusion food since Hong Kong has always long been a crossroads for culture; the toast comes from West while the preparation of shrimp in this way comes the Asian culture. When combined, you get this really fitting combination of crunchy bread and almost creamy shrimp. Shrimp Toast Ingredients: 4 slices sandwich bread 1/2 pound shrimp, finely chopped 1 egg white 1 teaspoon soy sauce 1 teaspoon sugar 1 tablespoon cornstarch Directions: Cut the crust off of each slice of bread, and then cut the bread into quarters to form 16 triangles of bread. Air-Fried Chicken Drumsticks

Welcome back!  Today, we have more fried chicken! This time, it's the classic chicken drumsticks, but instead of using a big pot of oil, we used an air-fryer (or actually the air-fry setting on our Breville Smart Oven Air). That way, it's healthier because it doesn't use so much oil, and it's convenient, because all you have to do it pop it in the air-fryer and it'll fry it up for you. Plus, it still tastes great! Fried Chicken Tenders

Welcome back!  Time for a fan favorite: Fried Chicken Tenders! This is a classic dish that most Americans are familiar with, along with the burger and hot dog posted previously. It also pairs perfectly with coleslaw , which is coming right up in our fast food recreations! Now, you may be thinking that chicken tenders are not that versatile, but we actually prepared them three ways: the traditional, straight up chicken, a chicken sandwich, and fried chicken tacos.  Just a side note, this spice recipe must seem oddly specific, right? That's because apparently, in a Chicago Tribune post , the recipe to KFC's 11 herbs and spices was leaked, so we used that to season our chicken. Did it taste good? Yeah! Did it taste like KFC? Fried Ravioli

Welcome back to Chez Chefpo!  Today, we made some fried ravioli! These golden, puffy, crunchy bites are a great way to enjoy both homemade or store-brought ravioli, and it pairs nicely with some marinara sauce. This technique should work with any sort of ravioli, but the kind we have here is Rana Italian Sausage. Fried Ravioli Makes a few servings (3 to 5) Ingredients: 1 package store-bought ravioli 1/4 to 1/3 cup all-purpose flour (the more flour, the easier to coat the ravioli) 1 egg, beaten 1 tablespoon milk 1 cup panko (breadcrumbs) 2 tablespoons parmesan cheese, grated 1 teaspoon dried parsley or Italian herbs Salt and pepper to taste Oil for frying Directions: Mix the milk with the beaten eggs. Combine the breadcrumbs, Parmesan, and herbs into an even mixture. Prepare the ravioli for frying: coat evenly in a layer of flour, then egg, then the breadcrumb mixture.
