Shrimp Toast

Welcome back! 
Today, we have an interesting dish hailing from Hong Kong: Shrimp Toast! We know, it sounds a little strange, but it is quite delicious and a great addition to a dim sum meal or just as an appetizer. The idea actually originated as a sort of fusion food since Hong Kong has always long been a crossroads for culture; the toast comes from West while the preparation of shrimp in this way comes the Asian culture. When combined, you get this really fitting combination of crunchy bread and almost creamy shrimp.

Shrimp Toast

Ingredients:

  • 4 slices sandwich bread
  • 1/2 pound shrimp, finely chopped
  • 1 egg white
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch

Directions:

  1. Cut the crust off of each slice of bread, and then cut the bread into quarters to form 16 triangles of bread.
  2. In a bowl, mix the chopped shrimp, egg white, soy sauce, sugar, and cornstarch until even.
  3. Top each triangle with this mixture, making sure to spread it out to the edges.

  4. Deep fry in some oil until golden.
There are some alternatives to this dish, for example, you could bake the dish instead of frying, but then you forego some of the richness that comes from the frying oil. We've also seen versions that have little shrimps on the top to decorate - it's not necessary but it certainly is an interesting visual addition. You could also sprinkle some sesame seeds on top. However you make it, shrimp toast is a fun and delicious dish to make and enjoy!

Tiramisu

Welcome back to Chez Chefpo!  Today, we've got a classic Italian dessert: Tiramisu! No twists on this one, this is your classic tiramisu that's about as traditional as it gets. In fact, it's truly comparable to the authentic tiramisu that you could find in Italy (more about this below)! While this is not the cheapest recipe, it is actually pretty easy and is definitely worth making because it is veramente delicioso! Tuscan Soup

Welcome back!  Today, we have a delicious soup originating from Tuscany, Italy (this is the region where Florence is in). Traditionally, this dish is a combination of various vegetables with some Italian bacon and Tuscan bread. The one we made is more Americanized, featuring Italian sausage, and it's a little heartier. However, they are still pretty similar in the vegetables used: kale, potatoes, carrots, etc.  Tuscan Soup Makes 4 servings Ingredients: 1/2 tablespoon olive oil 8 to 10 ounces Italian sausage 1 medium onion, chopped 3 cloves garlic, minced 2 tablespoons flour 3 cups chicken broth 1 to 2 cups half & half 1 large potato, diced 1 medium carrot, diced 1/2 bunch kale, chopped Salt and pepper to taste Directions: Steam the potato and carrot and save it for later.
