Cake Roll

Welcome back! 
Today, we have a delicious and aesthetic dessert: the Cake Roll! As the name suggests, it is the wonderful innovation of cake in log form. But it's not as simple as just rolling the sheet of cake up - we have to worry about the cake cracking when it rolls and the outside surface looking smooth and clean. So for this recipe, we switched up our usual Chiffon Cake recipe for something a little different, as you'll see in the first few steps.

Cake Roll


Ingredients:

  • 50 grams neutral oil
  • 70 grams cake flour
  • 60 grams milk
  • 5 egg yolks
  • 5 egg whites, chilled
  • 50 grams sugar
  • 1 teaspoon lemon juice
  • 1 cup whipping cream
  • 1 tablespoon sugar
  • Fresh fruit, like mango or strawberry
A 11" x 10" or 11" x 11" baking pan

Directions:

  1. Heat the oil in a small pot to 158-167°F.
  2. Remove the pot from the heat and mix in the flour thoroughly.

  3. Mix in the milk until evenly incorporated.

  4. Beat in the egg yolks one at a time until homogenous.

  5. Whisk the egg whites with lemon juice, slowly adding in the sugar once frothy, until soft peaks.

  6. Fold a third of the egg whites into the bowl with egg yolks, then fold the resulting mixture into the rest of the egg whites.
  7. Pour the batter in the baking pan lined with parchment paper. Bake in the oven at 300°F for 30 minutes, then 320°F for 3 minutes.
  8. Once done, crack open the oven door to ventilate for 3 minutes. Remove the cake immediately from the pan and let cool.
  9. Whip the whipping cream and sugar until stiff peaks.
  10. Remove the parchment paper from the cake and spread on a thin layer of whipped cream.

  11. Add on the fresh fruit along the middle of the cake. Cover with more whipped cream.

  12. Roll up the cake and chill in the fridge to set.


  13. Slice and serve!

With the more square sized baking pan, we were only able to make the cake roll form the outer circle of the log. However, we've also done this with a 9" by 13" rectangular pan, with which you can use to roll it up in a nicer spiral shape as shown below. As for customizing, cake rolls are just as flexible as any other cake - you can fill it with all sorts of fresh fruits, jams, or creams. You can even swap out the cake recipe for another Chiffon Cake recipe!

The more typical spiral version of the cake roll, filled with lightly caramelized diced apple.

Key Lime Pie

Welcome back!  Today, we have one of my favorite desserts: Key Lime Pie! There's so many things that are great about this dish from the texture to the combination of flavors. Plus, I prefer the flavor of key limes as compared to normal limes, as key limes are tarter and more citrus-y. Now this is a sour dish, so if that's not your thing, then you can cut back on some of the key lime juice and it'll be better. Any way, it's a great dessert! Tiramisu

Welcome back to Chez Chefpo!  Today, we've got a classic Italian dessert: Tiramisu! No twists on this one, this is your classic tiramisu that's about as traditional as it gets. In fact, it's truly comparable to the authentic tiramisu that you could find in Italy (more about this below)!
