Birthday Chiffon Cake

Welcome back! 
Today, we have a delicious birthday cake! This is the cake that we always make for birthdays in the Chefpo family, but really, you don't need a birthday to eat cake, right? Right. Anyways, this is really just a chiffon cake, so like our banana or lemon chiffon cakes, except that there's not an innate flavor to the cake. So, we add fruit and whipped cream on top and inside to make it delicious!

Birthday Chiffon Cake


Makes a 9" cake

Ingredients:

  • 7 eggs whites
  • 1 teaspoon lemon juice/white vinegar
  • 1/2 cup sugar
  • 7 eggs yolks
  • 2 tablespoons sugar
  • 1/3 cup orange juice
  • 100 grams oil
  • 165 grams cake flour
  • 3/4 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Various fruit
For whipped cream:
  • 4 cups heavy cream
  • 2 tablespoons sugar

Directions:

  1. Beat the egg whites and lemon juice until stiff peaks. Slowly add 1/2 cup of sugar along the way, about a third at a time.

  2. Beat the egg yolks with 2 tablespoons of sugar. Then add oil. Then add orange juice and vanilla extract.
  3. Sift the flour and baking powder in.
  4. Slowly pour a third of the egg white mixture into the egg yolk mixture while gently mixing. 

  5. Slowly pour the egg yolk mixture into the egg white mixture, folding along the way.
  6. Put in mold and tap.

  7. Bake at 310°F for 15 minutes, then 290°F for 40-45 minutes.
  8. Take the cake out. Flip it over on a rack like below. Let it rest, and once cool, remove from the pan.  

  9. Beat the heavy cream with the sugar.
  10. Cut the cake into thirds.

  11. Spread on fruit and whipped cream like in the photos, repeating with each layer.




  12. Cover the cake in whipped cream.

  13. Top with fruit (and macarons! Or whatever you like!).
Of course, you can put many other types of fresh fruit inside and outside the cake, like strawberries, pineapple, or kiwi, to name a few. You could also get creative with your decorations on the outside. In fact, that's what we do! Behold:

It's a cherry blossom/taiko festival featuring Sanrio characters!  They're made out of fondant, and you can really make all sorts of things - you can also see this in our Apple Curry recipe. The flowers are also all fondant too!

Key Lime Pie

Welcome back!  Today, we have one of my favorite desserts: Key Lime Pie! There's so many things that are great about this dish from the texture to the combination of flavors. Plus, I prefer the flavor of key limes as compared to normal limes, as key limes are tarter and more citrus-y. Now this is a sour dish, so if that's not your thing, then you can cut back on some of the key lime juice and it'll be better. Any way, it's a great dessert! Tiramisu

Welcome back to Chez Chefpo!  Today, we've got a classic Italian dessert: Tiramisu! No twists on this one, this is your classic tiramisu that's about as traditional as it gets. In fact, it's truly comparable to the authentic tiramisu that you could find in Italy (more about this below)! While this is not the cheapest recipe, it is actually pretty easy and is definitely worth making because it is veramente delicioso!
