Blueberry Cake

Welcome back! 
Today, we have an interesting dessert; it's a cake that's also kinda like a cheesecake, and it's loaded with blueberries! It's also got a good tartness because of the lime and greek yogurt, so it's a very nice combination of flavors. I'd imagine that you can make cakes like this with other fruits like cherries, strawberries, or peach, to name a few. 

Blueberry Cake


Makes a 9" cake

Ingredients:

  • 3 eggs
  • 1/2 cup sugar
  • 1 cup ricotta cheese
  • 1 cup greek yogurt
  • 6 tablespoons butter, melted
  • Zest from one lime
  • 1 teaspoon vanilla extract
  • Lime juice from 1/2 lime
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 1/2 cup blueberry

Directions:

  1. Crack the eggs into a bowl and add the sugar to it.
  2. Take a electric mixer and beat this mixture until it thickens and turns rather pale. On high power, this will take about 4-5 minutes.
  3. Add the ricotta cheese, greek yogurt, butter, lime zest, and vanilla extract into the mixture and beat it on low power just so it gets mixed together.
  4. Add the dry ingredients (flour and baking powder) and mix it on medium power. Now the batter is ready.
  5. Put the batter into the pan and sprinkle the blueberries on top. Try not to get too close to the edge as you want that kind of "crust" where there aren't blueberries.
  6. Bake the cake at 370° for 40 minutes.
  7. That's it!
When we made this, we actually substituted some of the greek yogurt for sour cream since we had some. This made a little more sour, though I'm not the biggest fan of sour cream, so I thought it could've just been greek yogurt. As for using greek yogurt vs. normal yogurt, they're actually rather different, so I would stick with greek yogurt.

Fig Crème Fraîche Cake

Welcome back!  Today, we have a cake featuring an interesting fruit: the fig! Figs are typically eaten dried or in some processed form because they don't stay fresh for long, so making this dish out of fresh figs was quite nice. Once completed, the fig flavor blends in very well with the rest of the cake and creates a dessert that is flavorful but not overly rich.
