Peach Cobbler

Welcome back! 
Today, we have a Southern favorite: Peach Cobbler! In fact, peach cobbler is so loved, it's become Texas's official state cobbler, and you can find it at any real barbecue place in the South. Cobblers are an easy way to bake your summer fruits into a warm, delicious dish, whether it be apples, berries, or of course, peaches. You basically throw all your ingredients together and toss it in the oven (a couple of times) and that's your cobbler!

Peach Cobbler

Ingredients:

For the filling:
  • 4 large peaches (about 2 pounds), cut into small chunks
  • Juice from half of a lemon
  • 1/4 cup brown sugar
  • A pinch of salt
  • 1 teaspoon corn starch
For the topping:
  • 1 cup flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 tablespoons cold butter, cut into small pieces
  • 1/4 cup plain yogurt
  • 2 tablespoons milk
  • 1/4 cup turbinado sugar
Optionally, you can add some spices like cinnamon and nutmeg, either to the filling or the topping.

Directions:

  1. In a bowl, mix the peaches with the lemon juice, brown sugar, salt, and corn starch.
  2. Put the peaches into your baking dish and bake at 350°F for 10 minutes.

  3. In another bowl, sift in the flour, sugar, baking powder, baking soda, and salt. Mix these ingredients together.
  4. Add in the small pieces of cold butter and with a pastry blender, mix it into the dry ingredients until crumbly.
  5. Mix the yogurt with the milk. Add this mixture into the bowl and mix until the dough is no longer floury, but still remains in clumps.

  6. Once the peaches are done cooking, place the chunks of the topping on top of the dish. Sprinkle the turbinado sugar on top.

  7. Bake the entire dish at 350°F for 40 minutes.
This peach cobbler is great because it has everything that you want in a dessert: the gooey, juicy peaches pair exquisitely with the crisp, fluffy topping. Despite being made of two very distinct parts, the juices from the peach seep into the dough above and create a strong cohesive bond that completes the cobbler. Tiramisu

Welcome back to Chez Chefpo!  Today, we've got a classic Italian dessert: Tiramisu! No twists on this one, this is your classic tiramisu that's about as traditional as it gets. In fact, it's truly comparable to the authentic tiramisu that you could find in Italy (more about this below)! Tuscan Soup

Welcome back!  Today, we have a delicious soup originating from Tuscany, Italy (this is the region where Florence is in). Traditionally, this dish is a combination of various vegetables with some Italian bacon and Tuscan bread. The one we made is more Americanized, featuring Italian sausage, and it's a little heartier. However, they are still pretty similar in the vegetables used: kale, potatoes, carrots, etc.  Tuscan Soup Makes 4 servings Ingredients: 1/2 tablespoon olive oil 8 to 10 ounces Italian sausage 1 medium onion, chopped 3 cloves garlic, minced 2 tablespoons flour 3 cups chicken broth 1 to 2 cups half & half 1 large potato, diced 1 medium carrot, diced 1/2 bunch kale, chopped Salt and pepper to taste Directions: Steam the potato and carrot and save it for later.
