Gingerbread Cookies

Welcome back! 
Today, we have a fun festive recipe: Gingerbread Cookies! Gingerbread cookies are a staple for the holiday season, featuring an iconic blend of spices mixed with the smooth richness of molasses. Plus, they're super fun to make with cookie cutters and then decorate with candies or icing. It makes for a great holiday activity that also gives you a delicious treat afterwards!

Gingerbread Cookies


Makes about 20 large cookies

Ingredients:

  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground ginger
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 egg

Directions:

  1. Cream the butter and brown sugar in a bowl using a hand mixer.
  2. Add the molasses in and mix.
  3. Crack the egg in and mix until smooth.
  4. Sift in the dry ingredients: flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg.
  5. Mix everything together with the hand mixer until the dough starts to clump up.
  6. Form the dough into a ball and set in the fridge for at least 30 minutes.
  7. Roll the dough into a 1/4"-thick sheet. Cut out the cookies using cookie cutters and decorate as you please.

  8. Bake in the oven at 350°F for 8-10 min.
Gingerbread cookies often come out quite hard, but the bake time of 8-10 minutes does very well in achieving a nice, soft texture more similar to a standard chocolate chip cookie. It just comes down taking into account how the cookies might set after being taken out of the oven and resting, whether for an hour or a couple days. However, if you do want a crisper cookie, feel free to bake them for a couple more minutes!

Key Lime Pie

Welcome back!  Today, we have one of my favorite desserts: Key Lime Pie! There's so many things that are great about this dish from the texture to the combination of flavors. Plus, I prefer the flavor of key limes as compared to normal limes, as key limes are tarter and more citrus-y. Now this is a sour dish, so if that's not your thing, then you can cut back on some of the key lime juice and it'll be better. Any way, it's a great dessert! Tiramisu

Welcome back to Chez Chefpo!  Today, we've got a classic Italian dessert: Tiramisu! No twists on this one, this is your classic tiramisu that's about as traditional as it gets. In fact, it's truly comparable to the authentic tiramisu that you could find in Italy (more about this below)! While this is not the cheapest recipe, it is actually pretty easy and is definitely worth making because it is veramente delicioso!
