Matcha Financiers

Welcome back! 
Today, we have another variation on the financier! This time, we're adding a little bit of matcha to add a spin on the flavor. However, unlike our previous Chocolate Financiers, the flavors of the matcha and the inherent almond flavor of the financier do blend, and actually complement each other quite well. It's an interesting fusion of French baking and Asian flavors.

Matcha Financiers


Makes 9 financiers

Ingredients:

  • 60 grams powdered sugar
  • 30 grams almond flour
  • 25 grams cake flour
  • 5 grams matcha powder
  • 1/8 teaspoon baking powder
  • 2 large egg whites (about 60-65 grams)
  • 50 grams brown butter
  • 1 teaspoon honey

Directions:

  1. Prepare the brown butter, following the instruction on the recipe here.
  2. Beat the egg whites until smooth.
  3. Add the honey into the egg mixture and mix until smooth.
  4. Sift the cake flour, almond flour, baking powder, matcha powder, and sugar into a bowl.
  5. While mixing, slowly pour the sifted dry ingredients into the egg mixture.
  6. Again, while mixing, slowly add the brown butter into the mixture.
  7. Pour the batter into the financier mold. If you're using a metal mold, grease the pan.

  8. Bake in the oven at 400° for 9-10 minutes.
You'll want to get some really good matcha powder for this recipe, as you'll want the distinct green tea aroma to be present. Optionally, you can sprinkle a little more matcha powder on top to make the flavor even stronger, but it's not really necessary. And once again, we would like to emphasize how important using brown butter is; it takes the flavor up a whole level!

Key Lime Pie

Welcome back!  Today, we have one of my favorite desserts: Key Lime Pie! There's so many things that are great about this dish from the texture to the combination of flavors. Plus, I prefer the flavor of key limes as compared to normal limes, as key limes are tarter and more citrus-y. Now this is a sour dish, so if that's not your thing, then you can cut back on some of the key lime juice and it'll be better. Any way, it's a great dessert! Tiramisu

Welcome back to Chez Chefpo!  Today, we've got a classic Italian dessert: Tiramisu! No twists on this one, this is your classic tiramisu that's about as traditional as it gets. In fact, it's truly comparable to the authentic tiramisu that you could find in Italy (more about this below)! While this is not the cheapest recipe, it is actually pretty easy and is definitely worth making because it is veramente delicioso!
