Instant Pot Pulled Pork

Welcome back! 
Today, we have a delicious barbecue classic: pulled pork! This is a great recipe that, thanks to the Instant Pot, anyone can conveniently make in their own homes while still enjoying the barbecue taste of the pork. The sauce and seasonings can also be adjusted to fit your own taste; perhaps you could add some liquid smoke to give it a nice, smoky flavor.

Instant Pot Pulled Pork


Ingredients:

  • 4 pounds pork butt/shoulder
  • 2 tablespoons oil
Seasoning Rub:
  • 3 tablespoons brown sugar
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon ground mustard
  • 1/2 teaspoon cayenne
Sauce:
  • 1 cup chicken broth
  • 1/4 cup white wine
  • 1/4 cup apple cider vinegar (optional)
  • 1 teaspoon hot sauce (optional)
  • 1 cup barbecue sauce

Directions:

  1. Cut the pork into strips that are about 2-3 inches thick.
  2. Sprinkle the seasonings on the pork and rub all around.
  3. Put in the fridge and let sit for 1-2 hours or overnight.
  4. In the Instant Pot, sear the pork with the oil. You might have to split the meat in half as it may not all fit in the Instant Pot at once. This is optional if you want to save time but it makes the meat much more flavorful.

  5. Take the meat out.

  6. With the gritty bits at the bottom from searing the pork, make the sauce:
  7. Pour in the broth and cook; this will dissolve those bits.
  8. Add in the white wine, apple cider vinegar, hot sauce, and barbecue sauce.
  9. Put the meat back in.
  10. High pressure cook this for one hour.
  11. Once done, shred the pork. You can do this in the Instant Pot.

Pulled pork is most commonly made into a sandwich (like a Sloppy Joe), which also features onions, pickles, or shredded cabbage (and some more barbecue sauce). However, you could find other creative ways of eating it, like in a wrap, which is considerably less messy and pretty fun, or on nachos. Or you could just eat it plain; it's that good!

Key Lime Pie

Welcome back!  Today, we have one of my favorite desserts: Key Lime Pie! There's so many things that are great about this dish from the texture to the combination of flavors. Plus, I prefer the flavor of key limes as compared to normal limes, as key limes are tarter and more citrus-y. Now this is a sour dish, so if that's not your thing, then you can cut back on some of the key lime juice and it'll be better. Any way, it's a great dessert! Tiramisu

Welcome back to Chez Chefpo!  Today, we've got a classic Italian dessert: Tiramisu! No twists on this one, this is your classic tiramisu that's about as traditional as it gets. In fact, it's truly comparable to the authentic tiramisu that you could find in Italy (more about this below)!
