Oven Baked Lemon Butter Dover Sole

Welcome back! 
Today, we have a delicious fish dish! This one is nice and lemon-y, and it's not too strong, so it makes for a light meal. The Dover sole is also sometimes called the common or black sole; there is a Pacific variety of sole that is rather different and not the kind used here. This fish is said to have naturally a light, buttery taste, so that makes sense in the context of this recipe.

Oven Baked Lemon Butter Dover Sole


Makes 4 servings

Ingredients:

  • 2 pounds sole filet
  • Juice from one lemon
  • 2-3 tablespoons butter, melted, or olive oil
  • 1 tablespoon chopped parsley
  • Lemon slices
  • Salt and pepper to taste

Directions:

  1. Take a baking pan to put the sole in and grease it.
  2. Layer the sole in the pan. Try to get it as even as possible. If your sole is thicker, you may only need to do one layer.
  3. Add the salt and pepper, lemon juice, and butter/olive oil.
  4. Garnish with parsley and some lemon slices.
  5. Bake it in the oven at 375°F for 20 minutes if you have multiple layers of sole or it's really thick, and 10-15 minutes if it's just a single, thinner layer.
You can see the first picture for our serving suggestion, with just some potatoes and broccolini. The fish turned out to be very tender and juicy, especially with the lemon juice and butter/olive oil. This was good to use with the broccolini, which had just been steamed.

Key Lime Pie

Welcome back!  Today, we have one of my favorite desserts: Key Lime Pie! There's so many things that are great about this dish from the texture to the combination of flavors. Plus, I prefer the flavor of key limes as compared to normal limes, as key limes are tarter and more citrus-y. Now this is a sour dish, so if that's not your thing, then you can cut back on some of the key lime juice and it'll be better. Any way, it's a great dessert! Tiramisu

Welcome back to Chez Chefpo!  Today, we've got a classic Italian dessert: Tiramisu! No twists on this one, this is your classic tiramisu that's about as traditional as it gets. In fact, it's truly comparable to the authentic tiramisu that you could find in Italy (more about this below)!
