Halloween Special!

Welcome back! 
Today, we have a very special post because it's Halloween! We made lots of different spooky foods that are fun and delicious, ranging from appetizers to full meals to assorted snacks. They're also great for making with kids, since they're fun and not too hard. While there's not a formal recipe, this is great to give some ideas for your next spooky party!

Intestines Pastry


This is a sweet dish that can be served as a breakfast or dessert. The "intestines" are made of puff pastry with a mixture of cooked apple, raisins, and dried cherries as the filling. After baking, you can add some jam around to make it look bloodier; we only had preserves, so we just used it to fill in the spaces. Also, our intestines are pretty short because we didn't have enough filling; to make it more realistic, you should make some more. In general, when making this, you want to keep in mind how much the pastry will expand when baking so you can determine how to align it correctly.

Finger Cookies


These are some frighteningly realistic fingers; but they're actually just almond cookies. However, you don't necessarily have to use almond extract for your cookies. Creating the shape is key for this one, but it's not that hard since you have a model for you on your hands! The fingernail was created with a piece of almond, and to attach it to the finger, we used chocolate frosting. The dark color also gives it a more realistic color.

Mummy Pepper Poppers


These are really cute and tasty, and they also give quite a bit of heat! In the picture above, we used jalapenos, which were pretty large, and filled them with a cream cheese/cheese mixture. For the "mummy wrappings", we used some more puff pastry dough and just wrapped around it; for the eyes, we just used some cut olives. You could do these with bell peppers if they're a similar shape; however, when we tried that, we overfilled them and the filling exploded through the wrappings. Still delicious though!

Spider Dipper


It may not be the most fit spider, but it's great for dipping! All this was made with pizza dough, formed into the shape of the spider. Once fully baked, just cut out the middle of the abdomen and you can fill it whatever dip you want! Something less wet like spinach-artichoke dip here will probably work better. The legs make for nice breadsticks that you can dip into the dip. It's a little hard to see from here, but there's also a little cheese sprinkled on top of the legs.

In the picture above, you can also see some other quick little things we made:
  • With remaining pizza dough, you can make little snakes that you can also use to dip. Pizza dough has a lot of resistance to stretch, so in order to make long snakes, you'll have to put some effort in.
  • With hot dogs, you can also make fingers. Just cut them in half, cut some ridges, and use an onion as a fingernail with some ketchup underneath.
  • With a fried ball (of any sort, these here are mac and cheese), you can top it with a cucumber slice, an olive slice, and a little squirt of ketchup (to fill in the hole of the olive) to make an eye. While the combination of cucumber, olive, and ketchup is not the most appealing, the design is certainly interesting.

Monster Burger


When you hear monster burger, you usually imagine a giant burger loaded with toppings. Well, this one's actually a monster! The key points are: the teeth, which is cheese cut into teeth shape; the tongue, which is just a slice of cucumber (or you could use pickle); the blood, which is just ketchup; and the eyes, which are olives. You can prepare the rest of the burger however you want, but we just kept it classic in this one.

Eyeball Spaghetti


This is really a creepy dish, with squid ink noodles, hot dog worms, and an egg eyeball (or a meatball eyeball as you can see in the back). The key is to take a circular cut out of the egg and soak it in blue food coloring mixed with water. Then, cut a little bit off of that and put a little olive slice in. The hot dog worms are just hot dogs cut into thin strips. To make the eye a little less egg shaped, use the more spherical end of the egg and cut off the other part to make it flat. Put it in your pasta for a spooky spaghetti!

Vampire Teeth Apple Wedges


This is a fun snack that is equally scary! Just cut an apple roughly into the shape of a mouth. Spread some peanut butter inside this cut to get a sticky surface and put some marshmallows that are cut into teeth shape into the peanut butter. You can then use some jam as blood. We would recommend putting it at the top and letting it drip down on its own to make it look more realistic.

Key Lime Pie

Welcome back!  Today, we have one of my favorite desserts: Key Lime Pie! There's so many things that are great about this dish from the texture to the combination of flavors. Plus, I prefer the flavor of key limes as compared to normal limes, as key limes are tarter and more citrus-y. Now this is a sour dish, so if that's not your thing, then you can cut back on some of the key lime juice and it'll be better. Any way, it's a great dessert! Key Lime Pie Makes a 10" tart pan or 9" pie pan Ingredients: Crust: 2 1/2 cups almond flour 6 tablespoons butter, diced 1/4 cup sugar Pinch of salt If you want to use graham crackers for the crust, use about 1 1/2 cups (150 grams) of crushed graham cracker crumbs (about 10 sheets) along with 5 tablespoons melted butter and mix. Tiramisu

Welcome back to Chez Chefpo!  Today, we've got a classic Italian dessert: Tiramisu! No twists on this one, this is your classic tiramisu that's about as traditional as it gets. In fact, it's truly comparable to the authentic tiramisu that you could find in Italy (more about this below)! While this is not the cheapest recipe, it is actually pretty easy and is definitely worth making because it is veramente delicioso!
