Meatloaf

Welcome back!
Today, we have a dish that actually has a very long history. People have been eating minced meat in a loaf form since as early as the 5th century! Areas all around the world have different variations of this food, but the "classic meatloaf" that we see nowadays is American with German roots, as meatloaf was a traditional German/Scandinavian dish. It can also be eaten hot or not, though we always eat it hot since it tends to fit better with the rest of the meal.

Meatloaf

Makes 4 servings

Ingredients:

Meatloaf
  • 1 pound ground beef
  • 1 egg
  • 1/2 medium onion, chopped
  • 1/2 cup bread crumbs
  • 1/3 cup milk
  • 2 tablespoon chopped parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
Sauce:
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Directions:

  1. Saute the onions a little. This is optional but it'll taste better!
  2. Put all the meatloaf ingredients in a bowl.
  3. Mix it until it is thoroughly incorporated. At the end, the meat should be a little springy when you poke it, kinda like a memory foam pillow.
  4. Prepare the sauce simply by mixing the ingredients together.
  5. Put the meatloaf in a loaf-shaped pan and spread the sauce on it. Put it in the oven at 350° for 45 to 50 minutes.
  6. Top it off with some parsley as decoration and serve hot! (or cold if that suits you!)
Although this is a meat "loaf", we've also made it into a circular shape like below.
We've also done it so that the meatloaf is stuffed with mashed potatoes, since that is a classic side to pair with this dish. However, if you do this, keep in mind that the potatoes will take quite some space, so the size of your pan may need to be bigger to accommodate.

Tuscan Soup

Welcome back!  Today, we have a delicious soup originating from Tuscany, Italy (this is the region where Florence is in). Traditionally, this dish is a combination of various vegetables with some Italian bacon and Tuscan bread. The one we made is more Americanized, featuring Italian sausage, and it's a little heartier. However, they are still pretty similar in the vegetables used: kale, potatoes, carrots, etc.  Tuscan Soup Makes 4 servings Ingredients: 1/2 tablespoon olive oil 8 to 10 ounces Italian sausage 1 medium onion, chopped 3 cloves garlic, minced 2 tablespoons flour 3 cups chicken broth 1 to 2 cups half & half 1 large potato, diced 1 medium carrot, diced 1/2 bunch kale, chopped Salt and pepper to taste Directions: Steam the potato and carrot and save it for later. With the olive oil in a pot, cook the Italian sausage until browned.  Remove the sausage from the pot. Saute the onion and garlic in the pot. Add the flour into the pot and mix.
